Help finding Consultant Severe Gastro, brain fog & now Anaphylaxis issues! Long Covid?

Usual story of deteriorating health female aged 60 being referred on long NHS waiting lists here there any everywhere! I'm desperate enough to go private so need MCAS aware consultant recommendations please. I've seen Dr Croom recommended, any others?

Long history of allergies, then doubled in agony with stomach pain, diarrhoea and even blood loss after NSAIDs and high stress, GP says not IBS then puts IBS on my records when coeliac and IBD tests are negative! I haven't worked 7 years due to anxiety and increasing brain fog issues.

Was able to get fit, eat well and run until 2019, and all gone downhill. Covid 19 April 2022 hit my stomach without respiratory issues just tickly throat a day, then the horrendous stomach pain/diarrhoea and needing to sleep for a week. Since then fatigue and inflammation have raged, osteoarthritis flared up everywhere, brain fog memory so bad I feel a danger to myself at times! Now I've been diagnosed with ADHD and started stimulants, and also restarted HRT my tongue and throat swelled up making talking and swallowing difficult so finding stress, oestrogen and many meds I react to trigger histamine release this now makes sense that brain fog and inflammation are histamine related too.

GP did immunology referral without giving full picture so they wrote back refusing to see me, and they just advised anti-histamines and a year long wait to an allergy clinic appointment! It's Oxford Immunology so if anyone has been seen there and found they have knowledge of MCAS please let me know and I'll see if they will see me after hearing the full story of symptoms.

I'm sure I have mast cell issue or severe histamine intolerance, how to know which???? I had Tryptase blood test which was negative.

Family history of rare blood cancers and auto-immune diseases taking decades to diagnose, and daughter being investigated for POTS, my dad had allergic reaction to shellfish lip swelling so there's genetic link somewhere.

I have hypothyroidism and the HealthUnlocked group really helped me with this so hoping peeps on here can assist finding a medical professional to actually look at all my issues and diagnose and treat them. I worry organs are being damaged if my stomach is bleeding due to stress, but GPs have no time or ability to look at the whole picture, increasing find social media is the best help with health!
